Lime Curd Tart

There’s nothing worse than letting fresh produce go to waste. It pains me to toss a perfect piece of fruit in the trash. With a surplus of limes laying around our kitchen I decided to make one of my favorite sweet treats, a lime curd tart. Curd is one of the best ways to use up any extra lemons or limes because it can be stored and enjoyed in so many different ways—over pancakes, with shortbread cookies, served at tea time with scones or just on its own. Next to chocolate chip cookies, lime curd has my heart.
P.S. I used this recipe from Ina Garten and garnished with blueberries.
